Do you have a recipe in your artillery that just never, ever fails?
Here is my Old Faithful.
My Little Ladybird LOVES these pikelets, as do I- when she is kind enough to share with me.
Depending on what is in the fridge, we create all sorts of weird and wonderful combinations.
1 cup self-raising flour (we often use wholemeal)
3/4 cup milk
1 egg, lightly beaten
butter/ oil for pan-frying
Sift flour into large bowl.
Make a well in the centre.
In a separate jug/bowl, whisk milk and egg together.
Gradually add to well, whisking until smooth.
At this stage I add in my weird and wonderful combinations.*
Heat fry pan and melt butter or coconut oil or whatever you are choosing to fry in!
Drop heaped tablespoons of mixture into pan.
Cook 2-3 minutes before flipping and cooking 2-3 minutes on other side.
*Weird and wonderful combinations to add into pikelet mixture
- A few spoons of ricotta, grated zucchini and corn kernels with a sprinkle of turmeric
- A few spoons of tinned tuna and crumbled fetta
- Some pumpkin puree with ricotta
- Blueberries with a sprinkle of cinnamon

Wow! These look delish. I don’t have great pancake/pikelet karma but I may just have to give these a go! My fail safe recipe is my fudge. It’s me-proof and I can’t say that about many recipes!

Oooh love pikekets. Whenever I get the urge, I whinge and whine along with the kids until Hubby gives in and gets the skittle out. Works every time!
Afternoon tea time, nothing in the pantry, the pikelet is KING! Adding defrosted frozen blueberries is our favourite, but I am keen to try your savoury ideas. x
